Ein unbekanntes Edelstück

Die Fledermaus vom Rind

Der eigentümliche Name bezieht sich auf die Ähnlichkeit in der Form des Fleischstückes mit einer Fledermaus. Das kleine Teilstück wird aus dem Kreuzbein des Tieres geschnitten. Es gibt es vom Rind und auch vom Schwein (auch dies finden Sie im Sortiment von BEEF & more). Als besondere Spezialität gilt die Fledermaus vom Schwein in Wien, hier findet das Fleisch Verwendung bei der Zubereitung des Klassikers des Schnitzels nach Wiener Art.
Das Fleisch ist sehr zart und saftig und  von feinem Fett durchzogen und eignet sich hervorragen zum Grillen, aber auch zum sanften Schmoren im Bräter. Liebhaber von kurzgebratenem Rindfleisch schätzen die Fledermaus auch wegen ihres würzigen Aromas.
Wer dies einmal probiert hat, wird es immer wieder bestellen.
